Good Evening!  I have been away far too long and for no good reason really, lol.  Not a lot of exciting things going on here.  Hope everyone is well!!

RECIPE I HAVE TRIED:

So I did try this, and it did not turn out good.  Mine did not stay together like that, and I even tried to get a lot of the water out of the cauliflower before I mixed everything.  I did eat it, it was basically fried cauliflower with some cheese in a bowl.  Not impressed.

 

I think I’ll try something a little bit easier, and a lot more yummy 😛

Today was supposed to be the Cubs Opening day, but then this happened.  They rescheduled it for tomorrow.  We didn’t get a lot of snow, but enough so you couldn’t play baseball.  I love Clark!!

Happy Homemaker Monday 02.19.18

Good Evening!  It was a very gloomy, rainy Monday over here, but it’s in the 50s.  The snow is slowly being washed away.  But for us this is not a sign of spring.  Last year we had a snow storm in March.  Hope everyone has a great week ahead!!

RECIPE I HAVE TRIED:

So I did try the Chocolate Cherry Bombs and they were the bomb!!  I thought they would be eaten in one day, but we still have some left.  They are actually quite filling, and delicious, not too sweet at all, a perfect balance.  Mine turned out quite large, but I know next time to use less cake dough to shape around the cherries, but even so, they are delish!!  Here is how I made mine.

Chocolate Cherry Bombs

1 box Devils Food Cake Mix

1 container chocolate Frosting (I found a 10 oz at Family Dollar, and it was the perfect amount)

1 jar Maraschino cherries with stems

1 cup of water

3 eggs

1 stick butter or margarine

1 pkg. Semi-Sweet Chocolate Chips

1 t oil

Prepare the cake mix using 1 cup water, 3 eggs and 1 stick of butter or margarine.  Bake at 350 for 30-35 minutes.

Once cake is cooled, crumpled in a large bowl.  Add 10 oz of chocolate frosting and mix together.

Drain Maraschino cherries and pat dry with a paper towel.  Form the cake mixture around the cherry with the stem sticking out from the top.  Place on a cookie sheet lined with parchment paper.

Melt the bag of chocolate chips, adding 1 teaspoon of oil.  Dip the cake balls in the chocolate, covering completely.  Place in fridge for 1 hour until chocolate hardens.

I am posting a video of the same routine, same costume from a different competition.  This was such a beautiful performance; I especially liked it for their song choice.  They came in second place in the Olympics, doing the same routine, but she had a wardrobe malfunction, and it seems that is what everyone wants to focus in on, which I think is ridiculous.  It happened at the very end, but I could not find the performance in its entirety from the Olympics except for one from another country that had too much talking over it.  I wanted to share this amazing performance.  Ice dancing is so beautiful!!

WHAT’S HAPPENING:

Not much going on.  This past weekend, my mom and I were able to visit with our cousins at the coffee shop.  My cousin was in town, and we decided to meet up.  Her mom is my God Mother and my mom’s cousin.  It was nice to catch up.  We don’t get to get together like we used to, but it was just like old times.

Happy Homemaker Monday 02.12.18

Good Morning!  It’s a bright sunny day, after a weekend of snow. The news has reported that we had 9 consecutive days of measurable snow.  That sounds like we would have been buried, we almost were.  I don’t remember 9 days, but it was quite a few.  We did have a couple of inches on Wednesday, but we really got hit starting Friday, and it pretty much snowed all weekend.  But I enjoyed it, didn’t have to go anywhere, so that’s why I enjoyed it so much.  Check out Favorites Pics From the Camera below.

RECIPE I WANT TO TRY:

Chocolate Cherry Bombs.  I enjoy chocolate covered cherries, but as I get older, I find that they can be very sweet, especially the ones with milk chocolate, the ones with dark chocolate, are not as sweet.  I think these would be perfect since the main ingredient is cake!!  I’ll let you know how they turn out 😉

This was right before the big snow really started, so yes, we already had some on the ground.  The pic says Friday at 12 a.m. when it was technically Saturday.  This was taken from our front porch.  Yep, I stepped outside before I went to bed. #nightowl.

Good Evening!  It’s a late one, but it’s still Monday.  We are experiencing a nice little winter storm at the moment.  Looking to get about 3-5 inches of snow tonight.  Then more later on in the week.  We really haven’t had much snow, so I am enjoying it.

RECIPE I HAVE TRIED:

So I saw a recipe for Chicken Cordon Bleu.  It looked super delicious, but rather involved.  The video I saw of it, didn’t have the recipe written out, so I did a Google search to see if I could find it, and Google suggested a Chicken Cordon Bleu Casserole!  Yes please!!  I checked it out, and used the sauce recipe from the first one I saw, and this is what I came up with.  Super easy, very flavorful!!

Chicken Cordon Bleu Casserole

Cook 3 lbs Chicken in Crock Pot 3 to 4 hours

Season with:

1 t salt

1 t pepper

1 t Garlic Powder

1 t Onion Powder

Shred and layer at bottom of 9 x 13 Casserole dish

Dice ¼ lb. of ham (from the deli) and layer over chicken.

Sprinkle 1 ½ cups shredded Swiss Cheese over Ham

Prepare the Sauce:

3  T Butter

2  Garlic Gloves

3  T Flour

2  c milk

¼ c Dijon Mustard

1  c shredded Parmesan Cheese

Salt

Pepper

Melt butter, add flour until creamy.  Add milk until combined.  Add Dijon mustard, salt, pepper and parmesan cheese.  Stir until thick and creamy.

Pour sauce over the cheese layer

Topping:

1 ½ c Panko bread Crumbs

4 T Butter – melted

½ t Season Salt

Mix bread crumbs and season salt, add melted butter and mix together.  Sprinkle topping over the top of the sauce.

Bake at 350 for 30 minutes.  Serve with your favorite side dishes

Always fun to watch.  My son shares these with me.  These are real shots, not a trick of the camera.  I read an article from a couple of years ago, that two of the 5 guys do this as a full time job.  Maybe by now they all do, but I enjoy watching them, and you can’t help but get excited when they land these crazy tricks.

WHAT’S HAPPENING:

Over the weekend my middle son Elijah turned 17!  He just loved the cake that my nephew had at his wedding, so I ordered his cake from the lady who made theirs.  It was delicious.  As they are getting older, it’s getting harder to coordinate everyone’s schedule to celebrate.  But he was able to have fun at the Youth Night at church.

Not much else going on.  I’ll be working on filing taxes for everyone, but that is actually something I enjoy doing and I’ll be doing some painting in the bathroom this weekend.

Happy Homemaker Monday 01.15.18

Good Evening!  Enjoying a 3 day weekend.  It has been very cold out here, but we did get some snow last night into this morning, not a lot but enough.  Over the weekend, the winds were very strong causing huge waves on the lake, so our beautiful park looks like the Hoth planet from Star Wars.  Me, Livi and Ben ventured out there today to look around.  Check out the video and pics below.  Stay warm and enjoy your week.

I made this the other night, and we had soup and sandwiches.  It has a good flavor, I would of liked it a little bit thicker, which is probably because I didn’t let it get thick enough.

I guess you can say I have officially started my book.  I plan to start with my own anthology of romantic stories.  I have joined Dan’s critique group and sent off several of my stories to start.  I will be writing new ones to add.  It’s just the beginning stages, but it is now a work in progress, and not just a thought
